Meatless Meals

There are many benefits to enjoying meatless meals - including reducing our plastic footprint. Most meats and dairy products are packaged in plastic, so this month, I will reduce my animal product consumption and enjoy 1 vegetarian or vegan meals each day.

    Quinoa Salad
    One cup of Quinoa (cooking instructions should be on container)
    While the quinoa cooks, add the juice/zest of 1 lemon to a big bowl, along with the 1 teaspoon oregano(you can also use basil), ¾ teaspoon salt, and about ¼ teaspoon of pepper. Add in ¼ cup of olive oil.
    Add fully cooked quinoa to bowl and stir until mix is fully combined. WAIT UNTIL COOL TO ADD VEGGIES (they get soggy otherwise that wasn’t fun to find out)
    Cut one cucumber into quarters
    Add olives to liking (I recommend cutting in half but whole works just as good)
    Add a can of dry rinsed chickpeas
    Put some basil on top and if you’re feeling fancy you can add feta or mozzarella cheese in tiny pieces
    Perfect for hot days :)
