Give Veggie Scraps Another Life

Vegetable broth cartons are not easily recycled and often not accepted for recycling at all. To avoid or reduce my use of these cartons, I will save my vegetable scraps and fresh herb stems to make homemade vegetable broth instead.

    We discovered a Coop in our neighborhood, where they not only accept, but encourage customers to bring their own containers for bulk items. They even make an effort to weigh your container in advance, so no worries about which container you bring or about 'paying' extra.

    Between the deer, groundhog, rabbits & squirrels that frequent the garden, there's not a whole lot that I can successfully plant & harvest. Today however, a friend was nice enough to share some of her abundance. To pay it forward, I shared some ideas/recipes to create some variety in the daily menu.

    Most soups, but the broth will stay frozen until the weather is cooler. Can't include soup in the menu right now. Unless we go for gazpacho.
